2 lb bag of frozen hash brown potatoes
1 1/2 sticks of butter
1/2 teaspoon garlic powder
1 can cheddar cheese soup or cream of chicken soup
1/2 cup canned chopped mashed carrots
2 cup sour cream
2 cups shredded cheddar extra sharp cheese
2 cups buttery style crackers put through food processor till fine crumbs
In a large bowl mix the potatoes with melted butter. Mix everything together except cracker crumbs and pour into a butter 13x9 casserole dish. Mix the crackers crumbs with the rest of the butter and top the casserole with this mixture. Bake at 350 for 45 minutes to an hour or until cheese is melted and potatoes are soft.
