I always have to be different and inventive. I love my San Marzano tomatoes and with these freshly sliced plum tomatoes and crisp crust pizza this was a slice of the good life for me! Enjoy! |
Fresh basil
Slices of plum tomatoes
Slices of Eggplant baked around 30 minutes on a cookie sheet
red pepper flakes
Whole Milk mozzarella slices
Homemade Mom's Pizza dough or Store bought pizza crust 2 pounds

oregano
3 cloves minced garlic
optional fennel seeds
grating cheese
Stretch the dough out on a cookie sheet that has been slathered with olive oil and floured fingers, it will hold in place better.
Let rise until double. Bake in a 430 degree hot oven until browned on the bottom, around 10 to 15 minutes.
Remove from oven. Top with sauce, tomatoes, eggplant, basil, sprinkle lightly with oregano. Place garlic on top of tomatoes evenly. Top with thickly sliced mozzarella over each tomato. Drizzle with olive oil and lots of grating cheese. Bake until cheese is crisp and almost starting to burn! Enjoy!
