1. Remove the stem from the mushroom and scrape out any remaining bits with a spoon. Place the mushrooms in a big saucepan.
2. Cover mushrooms with water and bring to a boil. Boiling ensures you remove all the dirt and bacteria from the mushrooms. The mushrooms will shrink in size, which is why I always get at least 2 containers of mushrooms. Boil for 2 minutes and remove from heat and drain. Rinse with cold water to stop the cooking process. Transfer the mushrooms to a plate lined with paper towels.
3. Top with paper towels and pat dry. You may have to repeat this step several times. Mushrooms soak up a lot of water.
4. Place mushrooms in a pie tin sprayed with nonstick cooking spray. I use a metal disposable pie tin. You can use a cookie sheet if you do not have a pie tin. Just line your cookie sheet with foil and spray with nonstick spray.
5. In a medium-sized bowl, combine your pepperoni, pizza sauce, cheeses, and seasoning. Mix. Using a spoon, fill your mushrooms with your combined ingredients.
6. Top your mushrooms with your remaining cheese.
7. Broil until your cheese starts to bubble and is golden brown. Serve and Enjoy.
